In supermarkets around the world, the fruit and vegetables on sale are usually smooth, evenly colored, and perfectly shaped. Row after row of produce looks almost as if it came from a picture book, and most shoppers naturally reach for the items that appear the freshest and cleanest. What many shoppers do not realize is that a large amount of the food grown on farms never reaches the shelves at all. Before produce is sent to stores, it is carefully sorted, and anything that does not match strict rules about size, color, and shape is separated out. Even a slightly curved cucumber or a tomato that is a little too large can fail these tests.
